Removing a crown is careful demolition on a roof. The old concrete or mortar is broken out in manageable pieces with hand tools or a small breaker, lowered in buckets or bags, and kept out of the flue with a cover over the tile.

The goal is to reach sound masonry: brick that is firm, mortar that is hard. Where the top courses are loose or soft, removal continues down through them, and they are relaid before the new crown is formed. How far down we expect to go, and how that changes if the brick is worse than it looks, is agreed before the first piece comes off.
